Quick Apple Turnovers

Ingredients:

For the Filling:

  • 2 apples, peeled, cored, and diced
  • 2 tablespoons sugar
  • 1 tablespoon butter
  • Pinch of cinnamon

For the Pastry and Toppings:

  • Puff pastry (store-bought, thawed)
  • 3 tablespoons apricot jam
  • 3 tablespoons sliced almonds
  • 1 egg yolk + 1 teaspoon milk (for egg wash)

Instructions:

  1. Prepare the Filling:
    • In a small saucepan over medium heat, melt the butter.
    • Add the diced apples, sugar, and a pinch of cinnamon.
    • Cook for about 3-4 minutes, stirring occasionally, until the apples are slightly tender and the mixture is syrupy.
    • Remove from heat and let it cool slightly.
  2. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  3. Prepare the Pastry:
    • Roll out the puff pastry on a lightly floured surface if it’s not already rolled out.
    • Cut the pastry into squares or rectangles (about 4×4 inches) depending on your preference.
  4. Assemble the Turnovers:
    • Place a small spoonful of the apple filling in the center of each pastry square.
    • Fold the pastry over to form a triangle or rectangle, sealing the edges by pressing them together with a fork.
  5. Prepare for Baking:
    • Mix the egg yolk with 1 teaspoon of milk to make an egg wash.
    • Brush the tops of the turnovers with the egg wash.
    • Spread a thin layer of apricot jam over the top of each turnover.
    • Sprinkle with sliced almonds.
  6. Bake:
    • Place the turnovers on a baking sheet lined with parchment paper.
    • Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and puffed up.
  7. Cool and Serve:
    • Allow the turnovers to cool slightly before serving.
