Quinoa and Roasted Vegetable Bowl

Ingredients:

For the Quinoa:

  • 1 cup quinoa
  • 2 cups water or low-sodium vegetable broth
  • Salt, to taste

For the Roasted Vegetables:

  • 1 medium zucchini, diced
  • 1 bell pepper (red or yellow), diced
  • 1 cup cherry tomatoes, halved
  • 1 red onion, diced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano

For the Dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste
  • Fresh herbs (parsley or basil), chopped for garnish

Optional Protein Add-ins:

  • Grilled chicken breast, chickpeas, or tofu

Instructions:

  1. Prepare the Quinoa:
    • Rinse quinoa under cold water. In a medium saucepan, combine quinoa, water (or broth), and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until all the liquid is absorbed. Fluff with a fork and set aside.
  2. Roast the Vegetables:
    • Preheat the oven to 425°F (220°C).
    • On a large baking sheet, toss the zucchini, bell pepper, cherry tomatoes, and red onion with olive oil, salt, pepper, garlic powder, and oregano. Spread the vegetables in a single layer.
    • Roast in the oven for about 20-25 minutes, or until the vegetables are tender and slightly caramelized.
  3. Make the Dressing:
    • In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper.
  4. Assemble the Bowl:
    • In a large bowl, combine the cooked quinoa and roasted vegetables. Drizzle with the dressing and toss to combine.
    • If using, add your choice of protein on top.
  5. Serve:
    • Garnish with fresh herbs and serve warm or at room temperature. Enjoy your nutrient-packed meal!
