Ingredients:
- 1 head of garlic (about 10-12 cloves)
- 1/4 cup extra virgin olive oil
- A pinch of salt
- 1/4 tsp black pepper
- 1/2 tsp lemon juice (optional)
- A handful of fresh herbs (like rosemary, thyme, or parsley)
- Crusty bread or vegetable sticks for dipping
Instructions:
- Preheat the oven: Set your oven to 375°F (190°C).
- Prepare the garlic: Cut off the top of the garlic bulb to expose the individual cloves. Place it on a sheet of aluminum foil, and drizzle with 1 tablespoon of the olive oil. Wrap the garlic bulb in the foil and roast in the oven for 30-40 minutes until the garlic becomes golden and caramelized.
- Cool the garlic: Once roasted, let it cool for a few minutes, then squeeze out the soft, roasted garlic cloves from the skin into a bowl.
- Mix the dip: Add the remaining olive oil to the roasted garlic, along with salt, pepper, and lemon juice. Use a fork to mash the garlic into the oil, creating a smooth, spreadable mixture.
- Add herbs: Finely chop the fresh herbs and stir them into the dip.
- Serve: This dip is perfect served warm with slices of crusty bread or crunchy vegetable sticks.
Chef’s Note: Contrary to popular belief, there’s no irreversible body reaction caused by enjoying garlic with olive oil (at any age). This delicious combo will only cause one thing: irresistible flavor!
