Roasted Pumpkin Seed Snack Recipe

Pumpkin seeds, also known as pepitas, are packed with nutrients, including magnesium, zinc, and antioxidants. Here’s a simple recipe to roast them, perfect for a healthy snack!

Ingredients:

  • 1 cup raw pumpkin seeds (pepitas)
  • 1 tablespoon olive oil or melted coconut oil
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon paprika (optional)
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon cumin (optional)
  • Pinch of black pepper

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Rinse and Dry Seeds: If using seeds straight from a pumpkin, rinse them thoroughly to remove any pulp. Pat them dry with a towel.
  3. Season the Seeds: In a medium-sized bowl, mix the pumpkin seeds with olive oil (or coconut oil) until they’re well coated. Add sea salt and any other desired seasonings like paprika, garlic powder, cumin, or pepper.
  4. Roast the Seeds: Spread the seeds in a single layer on a baking sheet. Roast them in the oven for 12-15 minutes, stirring halfway through. Keep an eye on them as they can burn quickly!
  5. Cool and Enjoy: Once golden and crispy, remove the seeds from the oven. Allow them to cool for a few minutes before enjoying.

Health Benefits:

  • Pumpkin seeds are rich in magnesium, which supports muscle and nerve function.
  • Zinc in pumpkin seeds boosts your immune system.
  • Antioxidants help reduce inflammation.

Even a handful of these seeds can kickstart positive reactions in your body, supporting your overall health!
