Savory Marinated & Baked Tofu for Vegan No-Chicken Noodle Soup

  • 1 block extra-firm tofu, pressed and cut into 1-inch cubes

  • 1/4 teaspoon salt

  • 1/4 cup chopped celery
  • 1/4 cup chopped mushrooms
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 cups vegetable broth
  • 1/2 cup egg noodles

Instructions:

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a medium bowl, whisk together the olive oil, soy sauce, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Add the tofu cubes to the bowl and toss to coat.
  4. Spread the tofu cubes in a single layer on a baking sheet lined with parchment paper.
