Ingredients:
- 300g fresh okra, washed and trimmed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 large tomato, chopped
- 1 tablespoon olive oil
- 1 teaspoon cumin seeds (optional)
- 1 teaspoon turmeric powder
- 1/2 teaspoon chili powder (optional, adjust to taste)
- Salt to taste
- 1 tablespoon lemon juice
- Fresh cilantro, chopped (for garnish)
Instructions:
- Prepare the okra:
- Wash the okra thoroughly and pat it dry with a paper towel.
- Trim the ends and cut the okra into 1-inch pieces.
- Sauté the onions and garlic:
- Heat the olive oil in a large pan over medium heat.
- Add the cumin seeds (if using) and let them sizzle for a few seconds.
- Add the chopped onions and sauté until they become translucent (about 4-5 minutes).
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the tomatoes and spices:
- Add the chopped tomatoes to the pan and cook until they soften and release their juices (about 3-4 minutes).
- Stir in the turmeric powder, chili powder, and salt. Mix well to combine.
- Cook the okra:
- Add the okra pieces to the pan and stir gently to coat them with the tomato mixture.
- Cover the pan and cook for about 10-12 minutes on low heat, stirring occasionally. The okra should be tender but not mushy.
- Finish with lemon juice and garnish:
- Once the okra is cooked, squeeze fresh lemon juice over the dish and stir gently.
- Garnish with chopped cilantro.
Serving Suggestions:
- Serve the okra with warm rice or flatbread for a simple, delicious meal.
- You can also pair it with a side of yogurt or a light salad for a balanced dish.
