Simple Super Moist Vegan Banana Breadn Banana Bread

Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup coconut oil, melted (or any vegetable oil)
  • 1/2 cup brown sugar (or coconut sugar)
  • 1/4 cup almond milk (or any plant-based milk)
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup walnuts or pecans, chopped (optional)
  • 1/2 cup vegan chocolate chips (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mix Wet Ingredients: In a large bowl, combine the mashed bananas, melted coconut oil, brown sugar, almond milk, and vanilla extract. Mix until smooth and well combined.
  3. Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using).
  4. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix! If desired, fold in the chopped nuts and chocolate chips.
  5. Pour into the Pan: Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake: Bake in the preheated oven for 50-60 minutes or until a toothpick inserted in the center comes out clean. If the top is browning too quickly, you can cover it with aluminum foil during the last 10-15 minutes of baking.
  7. Cool: Once baked, let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  8. Serve: Slice and enjoy your moist vegan banana bread! It’s great on its own or with a spread of nut butter.
