- 3 ripe bananas, mashed
- 1/3 cup coconut oil, melted (or any vegetable oil)
- 1/2 cup brown sugar (or coconut sugar)
- 1/4 cup almond milk (or any plant-based milk)
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
- 1/2 cup walnuts or pecans, chopped (optional)
- 1/2 cup vegan chocolate chips (optional)
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
- Mix Wet Ingredients: In a large bowl, combine the mashed bananas, melted coconut oil, brown sugar, almond milk, and vanilla extract. Mix until smooth and well combined.
- Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using).
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix! If desired, fold in the chopped nuts and chocolate chips.
- Pour into the Pan: Pour the batter into the prepared loaf pan and smooth the top.
- Bake: Bake in the preheated oven for 50-60 minutes or until a toothpick inserted in the center comes out clean. If the top is browning too quickly, you can cover it with aluminum foil during the last 10-15 minutes of baking.
- Cool: Once baked, let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- Serve: Slice and enjoy your moist vegan banana bread! It’s great on its own or with a spread of nut butter.
