Ingredients
For the Biscuits:
- 2 eggs
- 100 g (1/2 cup) sugar
- 80 ml (1/3 cup) sunflower oil
- Zest of 1 lemon
- 50 ml (3 tablespoons) lemon juice
- 380 g (3 cups) all-purpose flour
- 12 g (2 1/2 teaspoons) baking powder

- 80 g (1/2 cup) powdered sugar
Instructions
- Preheat the Oven: Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Prepare the Wet Ingredients: In a large bowl, whisk together the eggs and sugar until well combined and creamy. Gradually add the sunflower oil, lemon zest, and lemon juice, mixing until smooth.
- Mix the Dry Ingredients: In a separate bowl, sift together the flour and baking powder. Slowly incorporate the dry ingredients into the wet mixture, stirring until a soft dough forms. It should be soft but not sticky. If the dough is too sticky, add a little more flour.
- Shape the Biscuits: Using your hands, form small balls of dough (about the size of a walnut) and place them on the prepared baking sheet, leaving space between each.
- Bake: Bake in the preheated oven for about 12–15 minutes, or until the biscuits are lightly golden on the bottom but still pale on top. They should be soft to the touch.
- Dust with Powdered Sugar: Let the biscuits cool slightly, then roll them in powdered sugar while they’re still warm. Dust generously for a beautiful, snowy finish.
