Ingredients
- 3 large eggs
- 65g fresh spinach (about a large handful)
- Salt to taste
- Oil for pan (a light coating)
Instructions
- Blend Ingredients: Place the eggs, spinach, and salt into a blender. Blend until smooth and well combined.
- Preheat and Oil Pan: Lightly coat a non-stick pan with oil and heat over medium-low.
- Cook the Wraps: Pour a small portion of the batter into the pan (about ⅓ each time). Tilt the pan to spread the mixture thinly and evenly.
- Cover and Cook: Cover the pan with a lid and cook for 1-2 minutes, or until the wrap begins to set. Flip carefully and cook for another 1-2 minutes on the other side.
- Cool and Store: Let the wraps cool on a plate, then layer with parchment paper in between to prevent sticking. Store in an airtight container in the fridge.
