Sprouted Onion Bulb Fritters

Ingredients:

  • 3-4 sprouted onion bulbs, finely chopped (use the bulbs and the green sprouted tops)
  • 1 small potato, grated (optional for binding)
  • 1/2 cup chickpea flour (or all-purpose flour)
  • 1/4 cup rice flour (optional, for extra crispiness)
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1 tablespoon chopped cilantro (optional)
  • Salt to taste
  • Water as needed
  • Oil for shallow frying

Instructions:

  1. Prepare the batter:
    • In a mixing bowl, combine the chopped sprouted onion bulbs (both the white bulb and green tops), grated potato, chickpea flour, rice flour, turmeric, cumin seeds, ground coriander, red chili powder, cilantro, and salt.
    • Gradually add water to form a thick batter, enough to coat the vegetables but not too runny.
  2. Frying the fritters:
    • Heat oil in a shallow pan over medium heat.
    • Once the oil is hot, drop spoonfuls of the batter into the pan, pressing them gently to flatten into fritter shapes.
    • Fry until golden brown and crispy on both sides, flipping occasionally. This should take about 3-4 minutes per side.
  3. Serve:
    • Once cooked, place the fritters on a paper towel to drain excess oil.
    • Serve hot with a side of chutney or your favorite dipping sauce.

Tips:

  • You can add other veggies like grated carrots or zucchini to the batter for extra flavor.
  • For a gluten-free version, stick to chickpea flour and skip rice flour if desired.
