### Sweet Potato and Egg Hash

 

**Ingredients:**
– 2 medium sweet potatoes, peeled and diced
– 1 tablespoon olive oil
– 1 small onion, finely chopped
– 1 bell pepper, diced (any color)
– 2 cloves garlic, minced
– 1 teaspoon smoked paprika
– 1/2 teaspoon ground cumin
– Salt and pepper, to taste
– 2 large eggs
– Fresh parsley or chives, chopped (for garnish)

**Instructions:**

1. **Prepare the Sweet Potatoes:** In a large skillet, heat the olive oil over medium heat. Add the diced sweet potatoes and cook for about 10-12 minutes, stirring occasionally, until they start to soften and brown slightly.

2. **Add Vegetables:** Add the chopped onion and bell pepper to the skillet. Cook for an additional 5 minutes, or until the vegetables are tender.

3. **Season:** Stir in the minced garlic, smoked paprika, and ground cumin. Season with salt and pepper to taste. Cook for another 2 minutes until fragrant.

4. **Cook the Eggs:** Make two small wells in the sweet potato mixture. Crack an egg into each well. Cover the skillet with a lid and cook for about 4-5 minutes, or until the eggs are cooked to your liking (soft or hard yolks).

5. **Garnish and Serve:** Remove from heat and garnish with chopped parsley or chives. Serve hot.
