Ingredients:

  • 230 g rolled oats (2 1/2 cups)
  • 1 teaspoon baking powder (6 g)
  • 1/2 teaspoon cinnamon
  • 2 medium apples
  • 3 eggs (separate the yolks from whites)
  • 1 teaspoon vanilla extract
  • 40 g dried cranberries (1/4 cup)
  • A pinch of salt

Instructions:

  1. Preheat Oven and Prep Baking Sheet: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare Apples: Peel and core the apples. Grate them using a fine grater and set aside.
  3. Mix Dry Ingredients: In a large bowl, combine the rolled oats, baking powder, cinnamon, and a pinch of salt.
  4. Prepare Wet Ingredients: In a separate bowl, whisk the egg yolks and vanilla extract together.

  6. Beat Egg Whites: In a clean bowl, beat the egg whites until stiff peaks form. Carefully fold the beaten egg whites into the cookie dough mixture. This will help the cookies rise and become light.
  7. Shape Cookies: Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake: Bake for about 10-12 minutes, or until the edges are golden brown. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
