This is the best banana bread you’ll ever taste! It’s super moist, incredibly delicious, and packed with flavor from ripe bananas, walnuts, and raisins.
Ingredients:
- 3 ripe bananas, mashed with a fork
- ½ cup butter (1 stick) at room temperature
- 3/4 cup white sugar (or 1 scant cup of honey)
- 2 eggs, room temperature
- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- ½ tsp real vanilla extract
- 1 cup walnuts, toasted and coarsely chopped
- ½ cup raisins
- 30 g (1.1 oz) melted butter for brushing
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- Prepare the batter:
- In a large bowl, cream together the room-temperature butter and sugar (or honey) until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition.
- Stir in the mashed bananas and vanilla extract.
- Mix the dry ingredients:
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the banana mixture, mixing just until combined. Do not overmix.
- Fold in the toasted walnuts and raisins.
- Bake:
- Pour the batter into the prepared loaf pan.
- Bake for 60 to 65 minutes, or until a toothpick inserted into the center comes out clean.
- If the top starts to brown too quickly, cover it loosely with aluminum foil.
- Finishing touch:
- Once the banana bread is baked, remove it from the oven and immediately brush the top with melted butter.
- Let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Serve:
- Slice the banana bread and enjoy it warm or at room temperature. It’s perfect on its own or with a spread of butter.
Note: If you like a slightly crispy top, place the banana bread under medium fire for 3 minutes after brushing with melted butter. This step is optional but adds a lovely texture to the bread.
