Super moist and incredibly delicious!
Ingredients:
- 3 ripe bananas, mashed with a fork
- ½ cup (1 stick) butter, at room temperature
- 3/4 cup white sugar (or use 1 scant cup of honey if you prefer)
- 3 eggs, at room temperature
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1/2 cup chopped nuts or chocolate chips (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
- Mash the bananas in a large mixing bowl using a fork until smooth. Set aside.
- Cream the butter and sugar (or honey) together in a separate bowl until light and fluffy. This should take about 2-3 minutes.
- Add the eggs one at a time to the butter and sugar mixture, beating well after each addition. Stir in the vanilla extract.
- Combine the flour, baking soda, and salt in a separate bowl. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- Fold in the mashed bananas and any optional add-ins like nuts or chocolate chips, if using. Be careful not to overmix.
- Pour the batter into the prepared loaf pan, spreading it evenly.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, you can cover it loosely with aluminum foil.
- Cool the bread in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
