Protein-Rich Lentil Patties

Ingredients:

  • 1 cup dried lentils (any variety, but green or brown work best)
  • 2 1/2 cups water or vegetable broth
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, grated
  • 1/2 cup breadcrumbs (use gluten-free if needed)
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for cooking)
  • Optional: 1 tablespoon nutritional yeast for a cheesy flavor

Instructions:

  1. Cook the Lentils:
    • Rinse the lentils under cold water. In a medium saucepan, combine the lentils and water (or vegetable broth).
    • Bring to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the lentils are tender and most of the liquid is absorbed. Drain any excess liquid and let the lentils cool slightly.
  2. Prepare the Veggies:
    • In a skillet, heat a little olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent and fragrant, about 3-4 minutes.
    • Add the grated carrot and continue to cook for another 2-3 minutes. Remove from heat and let cool slightly.
  3. Mix the Patties:
    • In a large mixing bowl, combine the cooked lentils, sautéed vegetables, breadcrumbs, parsley, cumin, coriander, paprika, salt, and pepper. If using nutritional yeast, add it in as well.
    • Mix until all the ingredients are well combined. You can use a potato masher or your hands to mash some of the lentils to help the mixture stick together better.
  4. Form the Patties:
    • Using your hands, form the mixture into patties. You should be able to make about 8-10 patties, depending on the size.
  5. Cook the Patties:
    • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the patties in batches and cook for about 4-5 minutes on each side, or until they are golden brown and crispy.
  6. Serve:
    • Serve the lentil patties warm with your favorite dipping sauce, in a bun as a veggie burger, or alongside a fresh salad.

Enjoy these protein-rich, easy-to-make lentil patties that are sure to impress even the most die-hard meat lovers!
