Banana Strings Utilization Muffins

Ingredients:

  • 3 ripe bananas
  • 1 cup sugar
  • 1 egg, beaten
  • 1/4 cup melted butter
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • Banana strings from 3 bananas (these little strings on the bananas are called “phloem bundles” and are completely edible, adding extra fiber)

Instructions:

  1. Preheat and Prep:
    • Preheat your oven to 350°F (175°C).
    • Line a muffin tin with paper liners or grease it lightly.
  2. Mash Bananas:
    • In a large mixing bowl, mash the bananas with a fork until smooth.
    • Make sure to include the phloem bundles (banana strings) for added texture and fiber.
  3. Mix Wet Ingredients:
    • Add the sugar, beaten egg, and melted butter to the mashed bananas. Mix well until everything is combined.
  4. Combine Dry Ingredients:
    • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet mixture, stirring just until combined. Do not overmix.
  6. Fill Muffin Tins:
    • Spoon the batter into the prepared muffin tins, filling each cup about 2/3 full.
  7. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Cool:
    • Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
