Ingredients:
For Turkey Pockets:
- 1 lb thick-sliced roasted turkey (from the deli, “dinner thick” slices)
- 1 box Stove Top stuffing mix (or any stuffing mix of your choice)
- 1/4 cup butter
- 1 1/2 cups water or broth (for stuffing)
- 4 large flour tortillas or puff pastry sheets (for the pockets)
- 1 egg (for egg wash, optional)
For Mashed Potatoes:
- 4 medium potatoes, peeled and cubed
- 1/2 cup milk or cream
- 4 tbsp butter
- Salt and pepper, to taste
For Green Bean Casserole:
- 1 can cream of mushroom soup
- 1 can (14.5 oz) green beans, drained
- 1/2 cup milk
- 1/2 cup crispy fried onions
- Salt and pepper, to taste
For Turkey Gravy:
- 1 packet Knorr Turkey Gravy mix
- 1 1/2 cups water
Instructions:
- Prepare the stuffing:
- In a pot, bring 1 1/2 cups of water or broth and 1/4 cup butter to a boil.
- Stir in the Stove Top stuffing mix, remove from heat, and let sit covered for about 5 minutes. Fluff with a fork once done.
- Make the turkey pockets:
- Preheat your oven to 375°F (190°C).
- Lay out the tortillas or puff pastry sheets on a flat surface.
- Place a few thick slices of roasted turkey in the center of each tortilla/pastry.
- Top the turkey with a generous scoop of the prepared stuffing.
- Fold the sides of the tortilla or pastry over the filling to form a pocket. If using puff pastry, brush the tops with beaten egg for a golden finish.
- Place the pockets on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown and crispy.
- Prepare mashed potatoes:
- Boil the potatoes in salted water until tender, about 15 minutes.
- Drain and mash with butter, milk, salt, and pepper. Adjust seasonings to taste.
- Make green bean casserole:
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the cream of mushroom soup, milk, and green beans.
- Pour the mixture into a casserole dish and bake for 25 minutes.
- After 25 minutes, sprinkle crispy fried onions on top and bake for another 5-10 minutes until the onions are golden brown.
- Prepare turkey gravy:
- In a saucepan, whisk together the Knorr turkey gravy packet with 1 1/2 cups of water.
- Bring to a boil, then reduce heat and simmer for 1-2 minutes until thickened.
- Serve:
- Serve the turkey pockets with a side of mashed potatoes and green bean casserole.
