- 150 g (1 1/4 cups) cake flour or all-purpose flour
- 5 g (2/3 tbsp) baking powder
- 50 ml vegetable oil
For the Banana Topping:
- 2 ripe bananas, sliced
- 50 g (1/4 cup) brown sugar
- 30 g (2 tbsp) butter
Instructions:
Step 1: Prepare the Banana Topping
- Preheat your oven to 180°C (350°F).
- In a small saucepan, melt the butter and brown sugar over medium heat until the sugar dissolves, forming a caramel sauce.
- Pour this caramel mixture into the bottom of a greased 9-inch (22 cm) round cake pan.
- Arrange the banana slices over the caramel in a single layer.
Step 2: Make the Cake Batter
- In a bowl, whisk together the egg, sugar, and vanilla extract until light and fluffy.
- Gradually add the milk, vegetable oil, and salt, mixing until combined.
- Sift the flour and baking powder into the wet ingredients, then gently fold until the batter is smooth and lump-free.
Step 3: Assemble the Cake
- Carefully pour the cake batter over the banana and caramel layer in the pan, smoothing the top with a spatula.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Step 4: Flip and Serve
- Once the cake is baked, let it cool in the pan for 10 minutes.
- Carefully invert the cake onto a serving plate, allowing the caramel and bananas to top the cake beautifully.
