Upside-Down Banana Cake: Super Simple Recipe

This recipe yields a deliciously moist banana cake with a caramelized banana topping. With only 1 egg and 2 bananas, it’s perfect for a quick, easy treat!

Ingredients:

For the Cake:

  • 1 egg
  • 60 g (6 tbsp) sugar
  • 130 ml milk
  • 2 g (1/2 tsp) salt
  • 1 tsp vanilla extract
  • 150 g (1 1/4 cups) cake flour or all-purpose flour
  • 5 g (2/3 tbsp) baking powder
  • 50 ml vegetable oil

For the Banana Topping:

  • 2 ripe bananas, sliced
  • 50 g (1/4 cup) brown sugar
  • 30 g (2 tbsp) butter

Instructions:

Step 1: Prepare the Banana Topping

  1. Preheat your oven to 180°C (350°F).
  2. In a small saucepan, melt the butter and brown sugar over medium heat until the sugar dissolves, forming a caramel sauce.
  3. Pour this caramel mixture into the bottom of a greased 9-inch (22 cm) round cake pan.
  4. Arrange the banana slices over the caramel in a single layer.

Step 2: Make the Cake Batter

  1. In a bowl, whisk together the egg, sugar, and vanilla extract until light and fluffy.
  2. Gradually add the milk, vegetable oil, and salt, mixing until combined.
  3. Sift the flour and baking powder into the wet ingredients, then gently fold until the batter is smooth and lump-free.

Step 3: Assemble the Cake

  1. Carefully pour the cake batter over the banana and caramel layer in the pan, smoothing the top with a spatula.
  2. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Step 4: Flip and Serve

  1. Once the cake is baked, let it cool in the pan for 10 minutes.
