Ingredients:
- 2 cups of frozen watermelon cubes
- 1/2 cup of coconut milk (or any milk of your choice)
- 1 tablespoon of honey or maple syrup (optional)
- 1 teaspoon of lime juice (optional, for a tangy twist)
- A pinch of salt (optional, to enhance flavor)
Instructions:
- Prepare the Watermelon:
- If you haven’t done so already, chop a watermelon into cubes and freeze them for at least 2 hours or until solid.
- Blend the Ingredients:
- In a high-speed blender or food processor, add the frozen watermelon cubes, coconut milk, honey or maple syrup (if using), lime juice (if using), and a pinch of salt.
- Blend until smooth and creamy. You might need to stop and scrape down the sides or use a tamper to help blend.
- Adjust the Consistency:
- If the mixture is too thick, add a little more milk, a tablespoon at a time, until you reach your desired consistency.
- Serve Immediately:
- Scoop the watermelon ice cream into bowls or cones and enjoy immediately for a soft-serve consistency.
- Optional Garnishes:
- Top with fresh mint leaves, chocolate chips, or a sprinkle of sea salt for added flavor and presentation.
Note: This ice cream is best enjoyed immediately after blending. If you want to save it for later, freeze it in an airtight container, but let it thaw for a few minutes before scooping, as it can become quite firm.
