Watermelon Ice Cream in 5 Minutes! Easy and Healthy Dessert

Ingredients:

  • 2 cups of frozen watermelon cubes
  • 1/2 cup of coconut milk (or any milk of your choice)
  • 1 tablespoon of honey or maple syrup (optional)
  • 1 teaspoon of lime juice (optional, for a tangy twist)
  • A pinch of salt (optional, to enhance flavor)

Instructions:

  1. Prepare the Watermelon:
    • If you haven’t done so already, chop a watermelon into cubes and freeze them for at least 2 hours or until solid.
  2. Blend the Ingredients:
    • In a high-speed blender or food processor, add the frozen watermelon cubes, coconut milk, honey or maple syrup (if using), lime juice (if using), and a pinch of salt.
    • Blend until smooth and creamy. You might need to stop and scrape down the sides or use a tamper to help blend.
  3. Adjust the Consistency:
    • If the mixture is too thick, add a little more milk, a tablespoon at a time, until you reach your desired consistency.
  4. Serve Immediately:
    • Scoop the watermelon ice cream into bowls or cones and enjoy immediately for a soft-serve consistency.
  5. Optional Garnishes:
    • Top with fresh mint leaves, chocolate chips, or a sprinkle of sea salt for added flavor and presentation.

Note: This ice cream is best enjoyed immediately after blending. If you want to save it for later, freeze it in an airtight container, but let it thaw for a few minutes before scooping, as it can become quite firm.
